Mini Doughnut Muffins

I’ve been thinking about doughnuts since the Food Network began advertising the new Doughnut Wars show.

Ingredients
Doughnut Muffins
  • 3 c. All-Purpose Flour
  • 2½ t. Baking Powder
  • ¼ t. Baking Soda
  • ¾ t. Salt
  • ½ t. Ground Nutmeg
  • 10 T. Unsalted Butter, softened
  • ¾ c. plus 2 T. Granulated Sugar
  • 2 Large Eggs, at room temperature
  • 1 t. Pure Vanilla
  • ¾ c. Whole Milk, at room temperature
  • 2 T. Buttermilk, at room temperature
Cinnamon Sugar Coating
  • 8 T. (1 stick) Unsalted Butter, melted
  • 1 c. Granulated Sugar
  • 1 T. Ground Cinnamon
Instructions
  1. Preheat oven to 350 degrees. Spray 2, 24-cup mini muffin tins with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt and nutmeg.
  3. In a separate small bowl, whisk together the milk and buttermilk.
  4. In the bowl of an electric mixer, beat butter and sugar until light and fluffy, 3-5 minutes. Beat in eggs, one at a time until just combined. Beat in vanilla. With the mixer on low speed, beat in ? of the flour mixture until combined and then half of the milk mixture. Repeat with remaining ingredients, ending with the flour mixture. Beat on low speed just until incorporated. Do not over mix.
  5. Fill the prepared muffin cups just to the rim with batter, about a spoonful. Bake, one pan at a time, until lightly golden and firm to touch, 15 minutes, rotating pan halfway through baking time. Let the muffins cool in the pan for 5 minutes.
  6. While the muffins cool, combine the sugar and cinnamon in a large, resealable plastic bag. Brush each muffin generously with melted butter. Place a few muffins in the bag with the cinnamon and sugar mixture. Shake well to coat the muffins. Repeat with remaining muffins.
Notes
-For Jelly Doughnut Muffins, I omitted the nutmeg and filled middle of the doughnut muffin with strawberry jam before baking and shook in a bag with powdered sugar after they had cooled. You could also fill them with jam after baking, with a pastry bag and small tip. -Makes about 40 doughnut muffins.

Cinnamon Roll Cupcakes

Makes 12 cupcakes

Ingredients FOR THE SWIRL
1/4 cup (1/2 stick or 56.5 grams) unsalted butter (melted)
1/3 cup (85 grams) brown sugar
1 teaspoon cinnamon

FOR THE CUPCAKES
1 1/2 cups (190 grams) all-purpose flour
1/2 cup (100 grams) sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick or 113 grams) unsalted butter, at room temperature
1/2 cup (113 grams) sour cream
2 eggs, at room temperature
1 teaspoon vanilla extract

To make the filling: In a small bowl, stir all of the ingredients together until combined. Set aside until ready for use.

To make the cupcakes: Preheat oven to 350 degrees (180 C). Line a muffin pan with cupcake papers; set aside.

In a large bowl, or the bowl of a standing mixer, combine the flour, sugar, baking powder, and salt. Add the butter, sour cream, eggs, and vanilla and beat until smooth. Scrape the bowl, making sure there are no streaks of flour remaining (do not over mix).

Place one tablespoon of batter in each of the paper liners in the prepared muffin pan. Make a small well in the middle of each cup of batter with a toothpick. Stir the filling to make sure the butter is combined, then spoon a scant 1 teaspoon of the filling into each cup. Use a toothpick to swirl the filling and batter together.

Add another tablespoon of batter to each cup and repeat the filling/swirling process.

Bake for 18 to 22 minutes, until a toothpick inserted in the center comes out clean. Transfer to a wire cooling rack and allow to cool completely before frosting.

Excellent with Coffee Icing and Cream Cheese Frosting (1/2 recipe)

Bacon, Egg and Toast Cups

For Mother’s Day from Martha Stewart – Bacon, Egg and Toast Cups .

Try cooked, crumbled sausage in place of bacon or make a vegetarian version with sauteed spinach. Dress things up with a sprinkle of Parmesan cheese.

Ingredients

3 tablespoons unsalted butter, melted
8 slices white or whole-wheat sandwich bread
6 slices bacon
6 large eggs
Coarse salt and ground pepper
Directions

Preheat oven to 375 degrees. Lightly butter 6 standard muffin cups. With a rolling pin, flatten bread slices slightly and, with a 4 1/4-inch cookie cutter, cut into 8 rounds. Cut each round in half, then press 2 halves into each muffin cup, overlapping slightly and making sure bread comes up to edge of cup. Use extra bread to patch any gaps. Brush bread with remaining butter.

In a large skillet, cook bacon over medium, until almost crisp, 4 minutes, flipping once. (It will continue to cook in the oven.) Lay 1 bacon slice in each bread cup and crack an egg over each. Season with salt and pepper. Bake until egg whites are just set, 20 to 25 minutes. Run a small knife around cups to loosen toasts. Serve immediately.

Cook’s Note

Standard muffin pans come in 6- or 12-cup size; if baking 6 items in a 12-cup pan, leave empty space in between. Nonstick pans are nice but not essential. Beware of very thin pans, which often lead to burning. Place pans on a baking sheet to make them easier to get in and out of the oven.

Pumpkin Spice Muffins

I made pumpkin spice muffins today. They are cooking for about another 10 minutes. I even followed the recipe, except I added an extra egg when the batter was dry (I didn’t use pumpkin because I had a winter squash already done and ready to go). I’m not planning to make the icing for them.

Ingredients

1-3/4 cups (425 mL) all-purpose flour
3/4 cup (175 mL) packed brown sugar
1-1/2 tsp (7 mL) baking powder
1 tsp (5 mL) cinnamon
1/2 tsp (2 mL) baking soda
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) ground ginger
1/4 tsp (1 mL) ground cloves
1/4 tsp (1 mL) nutmeg
1/2 cup (125 mL) chopped walnut halves
2 eggs
3/4 cup (175 mL) canned pumpkin puree
1/4 cup (50 mL) vegetable oil
1 tsp (5 mL) vanilla

Maple Cream Cheese Spread:
1/2 pkg (8oz/250 g pkg) cream cheese or light cream cheese, softened
1 tbsp (15 mL) icing sugar
1 tbsp (15 mL) maple syrup
1/4 tsp (1 mL) vanilla

Preparation:

Line 12 muffin cups with paper liners or grease; set aside.

In large bowl, whisk together flour, sugar, baking powder, cinnamon,
baking soda, salt, ginger, cloves and nutmeg; mix in 1/4 cup (50 mL)
of the walnuts.

In separate bowl, whisk together eggs, pumpkin puree oil and vanilla;
pour over dry ingredients. Stir just until dry ingredients are
moistened.

Spoon into prepared muffin cups. Sprinkle with remaining walnuts. Bake
in centre of 375°F (190°C) oven until golden and tops are firm to the
touch, 20 to 25 minutes. Let cool in pan on rack for 5 minutes.
Transfer to rack; let cool. (Make-ahead: Store in airtight container
at room temperature for up to 2 days or wrap each in plastic wrap and
freeze in airtight container for up to 2 weeks.)

Maple Cream Cheese Spread: In bowl, beat cream cheese until light;
beat in icing sugar, maple syrup and vanilla until blended.
(Make-ahead: Cover and refrigerate for up to 2 days.) Serve muffins
with spread.

Peach Muffins are in the Oven

Peach Muffins
I had to substitute brown sugar for the white and shrunk the recipe overall cause I only have a few peaches left, not 2 cups worth.

* 3 cups all-purpose flour
* 1 tablespoon ground cinnamon
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1 1/4 cups vegetable oil
* 3 eggs, lightly beaten
* 2 cups white sugar
* 2 cups peeled, pitted, and chopped peaches

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease 16 muffin cups.
2. In a large bowl, mix the flour, cinnamon, baking soda, and salt. In a separate bowl, mix the oil, eggs, and sugar. Stir the oil mixture into the flour mixture just until moist. Fold in the peaches. Spoon into the prepared muffin cups.
3. Bake 25 minutes in the preheated oven, until a toothpick inserted in the center of a muffin comes out clean. Cool 10 minutes before turning out onto wire racks to cool completely.
